The mango display at our local Market District here in Pittsburgh inspired me to make some fresh salsa yesterday for the 4th of July. I’m a huge fan of corn mixed in because it creates a nice crunchiness and a little pop of sweetness with every bite, although this salsa already comes sweetened with the mango. Prep time was about 45 minutes (with baby) and make sure to let it sit for at least 30 minutes prior to serving so the flavors can really mix together. This is such a great salsa for the summertime- enjoy!
Fresh Mango and Corn Salsa
1 red pepper
1 mango
2 jalapeno
1/2 red onion
1/2 cucumber
1 avocado
1/3 cup cilantro leaves
* chop all ingredients *
* in a large mixing bowl dump it all together and add 1 can of drained corn *
1 lemon
2 limes
* hand squeeze the lemon and limes into the mixing bowl *
Add:
salt
pepper
and
cayenne red pepper to taste
* mix it all up and cover for at least 30 minutes then serve *
